For the industrial production of pancakes two different types of specially developed automatic baking ovens are used.
One possibility is to bake the pancakes between upper and lower baking plates of baking plate pairs. At the oven head of a PKA oven the batter is poured onto the lower plates of heated baking plate pairs which are mounted on a baking tong chain. Then, the baking plates close and travel through the oven. After one turn, the baking plates re-open at the oven head and the baked pancakes are taken off. Ovens based on this principle are mainly used for small-capacity production.
The PAN was developed for medium capacities. In this oven the batter is poured onto the baking plates and the first side of the product is baked. Afterwards, the product is flipped over by a specially developed turning band and the second side is baked.
For producing pancakes at very high capacities, two PAN ovens are arranged behind each other. In the first oven, the pancakes are baked on one side, then they are flipped over and transferred to the baking plates of the second oven.
The ovens of the PAN series are especially used for the production of products which require the subsequent baking of both product sides.
Besides the European pancakes, also American pancakes and special products such as Poffertjes can be produced on the ovens described above.
