Aerating processes are the basis for the production of confectionery products such as marshmallows, aerated chocolate, fat creams, chewy or nougat products. The aeration process for e. g. chocolate makes the chocolate melt better and taste more intensive, while giving it fewer calories for the same volume. Sounds impossible, but that’s Haas-Mondomix.
